“contemporary chic and rustic warmth”
Proof is a Penn Quarter dining destination that exudes both contemporary chic and rustic warmth. The chef at proof is of Lebanese-Irish descent and he brings that background to his cooking. They have an excellent selection of cheeses, and an extensive bar.
I think this was the best dining experience I've had in DC. The charcuterie was great, and the cheeses were amazing. However, better than all that was the flat-iron steak. IT WAS WONDERFUL. I also tried their "Baller Edition" Rob Roy. It was great; I could smell the peat from a foot away.
The choice of meats and cheeses was great. The menu changes frequently so it's hard to review a particular dish, but our party of five enjoyed everything. Sit outside on the patio for some great people watching of people going to/from the Smithsonian American Art Museum across the street.
Proof has an excellent choice of cheese and charcuterie. I also enjoyed the planko chicken and it was equally amazing!
