It all began in May 1961, when Bob and Marianne Poole opened the Pig 'N Pancake restaurant in Seaside with $100 and $2000 worth of borrowed equipment. There was seating for 35 and the restaurant closed each day at 2 p.m.  The Seaside Pig ’N Pancake building has been expanded and remodeled a number of times and in 1987 the restaurant closed for 32 days while the building was gutted and rebuilt. In 1988 the neighboring building to the east was purchased and incorporated, resulting in the present layout featuring seating for 240 and a large gift shop. In all, the expansions and remodeling have incorporated one tavern to the west and two taverns to the east of the original premises.  In Astoria, the site of the former Lovell’s Auto used car lot and garage and Woody’s Drive Inn, was acquired in 1966. Located in the historic Union Town District, the site was remodeled and opened in January 1967 as the Astoria Pig 'N Pancake. The Astoria Pig 'N Pancake was totally renovated in 2008 and remains a favorite of local residents and tourist alike.  Pig ’N Pancake opened in Cannon Beach in 1997. It is located at the South end of the downtown area and overlooks an urban wetland and downtown. The dining area is elevated and gives the effect of dining in a “tree house” - unique and very enjoyable.  In 2006, Pig 'N Pancake ventured to the scenic Central Oregon Coast. Undeveloped land was acquired, a beautiful new building erected and in May 2006 the 5th Pig 'N Pancake opened in Lincoln City, marking the 45th Anniversary since the opening of the first location in Seaside. Located just blocks from the Casino, the Lincoln City restaurant boasts lofty ceilings as well as a generous parking lot to easily accommodate large vehicles and RVs.  Expansion continued in 2008 when Newport’s historic city hall was renovated and reopened in early 2009 as the newest Pig 'N Pancake restaurant. The city hall was originally built in the 1920’s and is now part of Newport’s Deco District with Pig ’N Pancake carrying on the tradition. Come check it out for yourself and see our Deco Pig - “The Professor”.  Bob and Marianne’s children and grandchildren are now actively involved in carrying on the Pig ’N Pancake tradition of excellence in family dining.  We take special pride in the Pig 'N Pancake’s many unique specialty pancakes. The recipes for Buttermilk, Swedish, Sourdough and French Batter pancakes are unique and are the original recipes the Bob and Marianne built the business on. Give them a try!
