At Chuy's, we don't take anything seriously...except our food! Our commitment is to provide unique, Authentic Mexican food to you using only the freshest of ingredients. In Order to bring you truly authentic flavors, we've traveled and sampled food from Santa Fe, New Mexico, through the Hatch Valley, along the western border of towns of Texas and Mexico and into the Rio Grande Valley in South Texas. Over the years,we've "borrowed" and improved a number of much loved recipes given to us by family and friends. Our Green Chile recipe comes from Espanola, New Mexico our ranchero Sauce was founded in Del Rio, Texas, and our Tomatillo Sauce originated in Donna, Texas. our Fajita Marinade was created by some ranch hands on a farm near Boca Chica Beach, at the mouth of the Rio Grande. To bring you the best Green Chiles possible, we contract with farmers in New Mexico every spring. Our Kitchen Managers even travel to Hatch, New Mexico fields every august, when our green chiles are harvested, to ensure that we bring in only the freshest and most flavorful peppers.
Chuy's is awesome!
When I moved to Austin in 1995, I was introduced to Chuy's. This Chuy's, on Barton Springs where it all started. I have tried various items on the menu, but have always settled back on my favorite: the Deluxe Chicken Enchiladas. They seem to have just the right amount of chicken wrapped up in those authentic corn tortillas. The sauce (I think it's tomatillo) they put on top is amazing. Add to this the beans and rice, along with the little bit of lettuce, pico de gallo, and jalapeños, and you've got an exquisite combination of heaven to Tex-Mex bliss. I have eaten Chuy's Deluxe Chicken Enchiladas for 19 years, and God help me, I cannot stop.
