Vine-to-bottle has been a fundamental part of our wine making philosophy for more than 25 years, long before it was hip to be farm-to table, or in our case, grape-to-glass. We know that great wines begin in the vineyard and that in Wisconsin, great wine can only be made from the grapes that grow best in our climate. We grow red wines; grapes with names like Merechal Foch and Leon Millot. They are French-hybrid varieties that are cold-hardy enough to withstand our harsh winters and short growing seasons, but make lovely, earthy, fruit-forward and regionally distinctive wines. We produce white wines too, but find that these grapes grow better in slightly more temperate climates, so we purchase the grapes for these wines mostly from the Finger Lakes Region of New York. As cold-climate varietals, with names like Vidal Blanc, Seyval Blanc and Giesenheim, they too are indicative of our growing region and thus a fine complement to our estate-grown reds.
