Hillbilly Willys Bar-B-Q

I started out as a 9-year-old kid who couldn't get enough fried eggs. My dear Mam-Maw finally stood me up in a chair and said, "Son, I'm going to show you this one time." I was ready now! From there I graduated to cooking my breakfast and lunch in the the summers over my Grandpa's stone pit he had built in the backyard. That's when then passion for cooking over an open fire began. Like most restaurants Hillybilly Willy's was started as a hobby cooking for family and friends. With the encouragement and support from my wife Angela, daughters Tiffany, Holly, Erica, Mom and friends, we opened our first restaurant in Ooltewah, TN. We began by catering for companies such as Tennessee Valley Authority, Bank of America, Economy Honda of Chattanooga, SBI Engineers, Rardin & Carroll Architects, to name a few. We now have been blessed with a second location in Lookout Valley (Chattanooga, TN). Hillbilly's has been compared to Memphis Bar-B-Q. Folks from Memphis have said that it's the only Bar-B-Q in Chattanooga that reminds them of Bar-B-Q back home. I've never had Memphis Bar-B-Q. I just developed a method for cooking fall off the bone Bar-B-Q that I like and it seems a few thousand folks like it too.
