We rely heavily on local famers and purveyors to bring us the region’s best, from vegetables and grains to seafood and meats. Farmers like John and Dale Fluke of Little Tree Farms in Granville County bring us gorgeous purple asparagus in the spring, heirloom chicken and turkey, fresh eggs and honey from their own hives. The Brinkley familyin Creedmoor brings us pork from the happiest pigs on earth, as well as tasty field peas, all manner of beans, whole wheat flour and prosciutto to rival Italy’s best. Bill Dow, whose farm is in Pittsboro, delivers beautiful lettuces and greens right to our back door nearly year round, and we rely on Flat River Farms in Timberlake for their endless array of heirloom tomatoes. Strawberries, blueberries and blackberries come to us from Lyons Farms in Creedmoor. We buy whole Dorper lambs from Captain John S. Pope Farms in Cedar Grove . Chef Ingram heads to the Durham Farmer’s Market every Saturday from March through October, where you’ll more often as not see him cooking up something amazing using whatever the farmers have available. Hopefully you get the picture! Great cooking starts with great ingredients, and they need not be expensive, unusual or hard to find. Chef Ingram believes in taking what is seasonally available and letting those ingredients speak for themselves. We have a passion for food at Four Square, and we hope you sense it when you dine with us. Food nourishes both body and soul. It comforts, titillates, and engages four of our five senses.
