December 2013 marks 25 years of restaurant-ownership for Lili’s Bistro chef-owner, Vance Martin. Starting in 1988 with Café Panacea which was also located in the then, very beginnings of the medical arts district and as life sometimes has it, it has come full circle and back to the medical arts district and specifically in the heart of an exciting, redeveloped Magnolia Avenue. Lili’s is a culmination (literally) of my 35 years of restaurant / bar experience. For example, the rapidly becoming famous “Lili’s Doughnuts” are the results of something I learned at my very first restaurant job at age 15! Lili’s is mostly made up of my 30 + years of Fort Worth experience. Including the almost famous Endicott’s Ore House in the early 80’s, Shaw’s and Abernathy’s restaurants of TCU and Westside fame, The Stone Gate Mansion (post Cullen Davis), 3+ years as an executive with Super Target (my only corporate job – thank goodness) and 2 years with friend Lee Rogers and a franchise called Crescent City Beignets. Throughout the years from 1980 to 2007, there were many other “bits of experience” along the way that in retrospect, have contributed to the creation and success of what is now Lili’s Bistro. In 2007, I was fortunate to be in the right place at the right time and have my friend, of 20+ years, Dwight Mitchell approached me about the property of what is now Lili’s Bistro. I was reluctant to do another restaurant but then again, life is a funny dog sometimes.
