The dazzling menu from Executive Chef Vincent Pouessel, a native of Brittany who formerly worked at the Michelin-starred Le Jules Verne restaurant located inside the one and only Eiffel Tower, combines Charlie Palmer’s classic Progressive American cuisine with the theatricality of Las Vegas in dishes like Signature French Onion Soup with foie gras, truffles, gruyere and puff pastry. Perhaps most famously known for its four-story wine tower and flying wine angels, Aureole Las Vegas is a boldly original show stopping experience.
