“Grab a cinnamon gin and tonic”
Upon graduating from the University of North Carolina at Wilmington Larry Baldwin made the move to NYC and began to hone his craft at Rocco DiSpirito’s Union Pacific. After UP Larry went to work as the sous Chef for Andy Nusser at Mario Batali’s Casa Mono where he had his first experience with Tapas and Spanish cuisine. His next move was opening Centro Vinoteca with Chef Anne Burrell as the Chef de Cuisine. Larry was then hired to open the Stamford location of the Barcelona restaurant group. While working at Barcelona Stamford as well as the Greenwich and South Norwalk restaurants, he gained a greater passion for Spanish flavors and the tapas style of dining. His next opportunity landed him in Rumson, NJ at Chef David Burke’s prolific Fromagerie. At the Fromage, Larry began to forge important relationships with a group of Tri-State farmers, which he continues to support today. After the Fromage Larry was approached by the team behind Alta Restaurant in the West Village. He signed on as the Executive Chef for their Catalan inspired tapas restaurant, Cata. Through their combined reverence for traditional Spanish gastronomy they have crafted a truly authentic dining experience. Also, Cata is one of the best places to grab a gin and tonic in New York. The menu features over 24 different variations of the recipe. The horseradish gin and tonic is highly recommended!
