“truly fantastic japanese noodles”
Momofuku Noodle Bar occupies the realm of deeply personal restaurants defined by one person's vision and drive — in this case, of David Chang, its chef and owner. His menu reflects his background as a Korean-American chef who came up through the seasonally obsessed kitchen at Craft doing his take on Japanese noodles plus, it seems, whatever else he feels like cooking. In addition to the Momofuku ramen — broth made with roasted pork bones, shiitake mushrooms and bacon, served with impossibly tender braised pork, peas, bamboo shoots, a poached egg and, of course, noodles — highlights include smoked chicken wings and Mr. Chang's celebrated steamed buns with pork.
Ramen has a unique, fantastic smoky flavor. I've tried both the standard ramen and the spicy and have to say both were incredible. Pork belly buns are also a must-get.
