“A delicious tasting menu”
Slide back the white doors at the back of Greenpoint beer bar Törst and you'll find 20 people. Eighteen are ripping into warm, crusty bread and cutting into tender slabs of squab; the other two are Daniel Burns and his sous-chef, quietly cooking everything to order in a kitchen the size of a Manhattan closet. Working precisely and purposefully here at Luksus, Burns crafts one hell of a tasting menu (with exceptional beer pairings, naturally). One night he scatters thin rye shards over lightly seasoned rock shrimp, a tasty nod to the classic Scandinavian smørrebrød; another, he pours a French press brimming with peppery, warming squash broth over shavings of squash and raw chestnuts. Much like the space itself, there's no waste or anything extraneous.
