Cure is a neighborhood restaurant with a small menu focused on local urban Mediterranean food. Justin's vision of cure is for it to be a reflection of the seasons in Western Pennsylvania and its local farms. Justin Severino is a Chef dedicated to supporting ethical farming practices, humane animal husbandry, sustainability and traditional cooking techniques. After graduating from Pennsylvania Culinary Institute in 1999 Justin moved to Monterey California in search of knowledge and experience. From 1999 to 2005 his life was dedicated to working for great Chefs including Cal Stamenov at Bernardus Lodge, Walter Manzke at Bouche and L' Auberge Carmel, Philip Wojtowicz and Michelle Rizzolo at The Big Sur Bakery and David Kinch at Manresa. In 2005 Justin opened a small charcuterie shop called Severinos Community Butcher in Santa Cruz CA. As the Community Butcher Justin used whole hogs from T.L.C. Ranch to produce traditional cuts of pork and charcuterie. In 2007 Justin and wife Hilary decided it was time to move back to Pittsburgh to have their family in their lives again. While in Pittsburgh Justin worked as Sous Chef for Derek Stevens at Eleven Restaurant and as Executive Chef of Elements Cuisine before venturing out on his own to open Cure.
Carnivores come for the locally sourced salumi platter comprised of ciccioli, 'nduja, pepperone, lardo, mortadella and duck speck. They stay for Beard Award nominee Justin Severino's meaty mains, such as Berkshire pork loin roast topped with romesco and salsa verde, and the Meyer Ranch hanger steak accompanied by cheddar churros and collard greens.
We've eaten here twice. The atmosphere is friendly and the food is first rate. Everyone works hard to make your visit here worth your time and tastebuds. Our last visit was particularly nice after I accidentally booked the wrong Cure on Open Table. The staff was able to squeeze us in at the bar and the bartender made the meal even more fun. He created great drinks for us as well as helped us pick great wines to go with some seriously wonderful food.
