Our Philosophy: To achieve the finest quality Japanese cuisine, you must start with the finest and freshest ingredients. In 1948, Takshi Osaki's grandfather began his training as a sushi chef and shortly after opened a sushi restaurant in Osaka, Japan. This restaurant is still a favorite of sushi fans in Osaka. Takeshi continued the family tradition by learning the fine art of sushi from his grandfather. After many years of training as a master chef, he was invited to work as a sushi chef at NOBU MATSUHISA of Aspen. Four years later, he opened the finest Japanese restaurant in Vail. Guests from around the world who visited Osaki's in Vail often consider their restaurant to have the finest sushi and Japanese cuisine anywhere.
