Vitek’s BBQ started out as a grocery store and meat market in 1915. William Frank Vitek was a butcher by trade and a good businessman by heart. He truly cared about his customers and was committed to providing them with high quality meats and other foods. Customers were treated special and always knew that he was glad to see them and appreciated their business. He was always happy to accommodate customers when special requests were made—just part of the reason customers felt so special. This is the foundation on which Vitek’s BBQ built the business and the way the business still operates today. William Frank first opened the Vitek’s Grocery and Meat Market in Granger, Texas, and later moved it to a small piece of property in south Waco. Years later an interstate highway was built running right by Vitek’s Grocery and Meat Market. In the late 1950’s, William Frank’s son, Willie, took over the business. Willie had the idea to make his own sausage. He brought in an electric cooker and began cooking . Through the years, he built Vitek’s into a name folks remembered and associated with high quality meats and excellent customer service. In 1972, Willie was ready to retire and turn over the business to his son, Bill. After many years behind a desk, Bill agreed. He started cooking barbecue on a portable pit and serving barbecue sandwiches. Several years later, he started making sausage and smoking it on the pit. While small grocery stores and butcher shops were closing and going the way of mega supermarkets and fast food restaurants were springing up on every corner, Bill had a better option to offer the public—authentic food that could be picked up quickly and taken home or back to work. He changed the name from Vitek’s Grocery and Meat Market to Vitek’s BBQ. Bill took every opportunity to talk with customers and get to know them and they became his long-time friends. But Bill did not build the business alone. Susan, his wife, worked by his side for 34 years. In late 2006, Bill and Susan retired. The desire to carry on the tradition was too strong. Julie, Bill and Susan's daughter, took over the business in July of 2007. Julie and her husband, Jason, set about making some changes. They expanded by adding on to the existing building, adding a Biergarten, and adding booths and tables. While the restaurant looks different, we still serve our famous Gut Pak —invented by Bill Vitek in 1983. Our high standards of quality food have never wavered and we still treat our customers like the good friends they are
The "Gut Pack" is a local favorite. I love this place! Right off I-35. Check the hours before you plan to go though. They close earlier than normal.
disappointed...first time here and experienced very plain food, overpricing for the portion size, they only had 1 menu in the WHOLE place, and the6 gave me the food semi warm (i ordered takeout). They also forgot to give me utensils for my potato salsa and mac n' cheese sides
This is a neat place to go for some BBQ! Good amount of space to sit and eat and they have both out door and in door seating.
