Craigie On Main is a newer, more spacious incarnation of Craigie Street Bistrot, Chef Tony Maws’ first labor-of-love a couple of miles down Mass Ave. And the quirky spirit of the tiny bistrot remains alive and well in the new space. Way before nose-to-tail butchery became trendy, chef Tony Maws was roasting pig heads until burnished and crisp and glazing fatty tails with fish sauce. These techniques still shine at his fine-dining flagship, and his commitment to local, seasonal ingredients means inspired vegetable-focused dishes as well.
