Run by siblings Paul C. Reilly, who mans the burners, and Aileen Reilly, who oversees front of house, beast + bottle is located in Denver’s Uptown neighborhood. They believe memories are made over shared meals – something their parents instilled in them when they were kids and family dinners were always around the table. beast + bottle empowers guests with the knowledge of how and where excellent food is produced and created from “farm to fork”. The owners’ relationships with farmers, ranchers and purveyors bring ethically and humanely raised, responsibly harvested and organic (whenever possible) meat, poultry, eggs, vegetables, fruit, fish and shellfish to the plate. The “beast” refers to the restaurant’s appreciation for the whole animal, utilizing all parts to honor its integrity. In-house butchery ensures every beautiful, usable piece finds its way on the menu and possibly introduces diners to new cuts. The “bottle” refers to drinks, duh. b+b’s wine program is influenced by the European tradition of drinking wine how you’d like – whether that’s a half-pour or by the carafe. A specialty saison from a local brewery made just for the restaurant and an inventive, approachable cocktail program complete the drink menu.
The beautifully crafted, seasonally intensive menu at chef-owner Paul Reilly's Uptown charmer doesn't miss a beat thanks to superior sourcing (Bangs Island mussels, for example) and a kitchen staff that touches every plate with hands of masterful scrutiny. From the crisp headcheese to the flatbread crowned with guanciale, Gorgonzola and baby arugula, Reilly and cohorts have created a delightful restaurant that's conducive to any occasion.
