Libby's of Lexington

Libby's Of Lexington is a quaint establishment that opened in 2010. We are located at 116 West Main Street and offer a wide variety of food choices in a family-friendly atmosphere. My dream has been to open my own restaurant since I was sixteen and now at thirty seven, I am living my dream. My original concept was to have Philly cheese steaks and pizza, but that has expanded as our customers ask for different things. We have everything from shrimp and grits, to pasta, to steaks. I have experience in the kitchen, having started in the business as a fry cook at D.L. McLaughlins in Irmo when I was only fifteen. Since then I have earned an Hotel, Restaurant, and Tourism Management degree from USC, helped open Brix’s (now The Bistro), and spent two and a half years in downtown Columbia as the Food and Beverage Director at the Sheraton. The food at Libby's is as diverse, with both Shanghai shrimp and bruschetta among the appetizers, and entrees ranging from smothered chicken to Folly Beach shrimp and Philly cheese steaks to greek salads, veggie wraps, and several daily specials. Libby’s is truly a family business, with myself in the kitchen, my wife Brandi often greeting customers at the door, and the couple's four year old twin daughters, Parker and Sydney, telling everyone that everything at Libby’s is homemade. Libby’s even got its name from another very important family member, the LaCoe's dog Libby, a recently deceased black lab mix whose image is in the restaurant logo.
