“never frozen always fresh!”
Walt Gerbase was born in the Key West Naval Base Hospital, and grew up in Marathon, Florida where he worked in numerous classic old school seafood restaurants. He attributes his frying skills to his mother Betty and his grilling skills to his dad, Paul. While attending USF in Tampa, Walt worked in the University Cafeteria, where he worked under a CIA graduate who recognized Walt's interest in the culinary arts in the late 1970's. Travel throughout the caribbean added to his recipe list, and he often found himself hanging out in the local kitchens. After 7 years working as a cook at the old Dockside Dave's, Walt brought his love and passion of his trade to John's Pass Village where he and his life partner, Sue Zirneskie opened "Walt'z Fish Shak". Walt and Sue reside in Madeira Beach, Florida.
