“The taste of belgium”
This canary yellow food truck is the brainchild of former IBM consultant Thomas DeGeest, a Belgian expat who turned in his briefcase for a griddle in 20tk. A self-proclaimed servant of the Belgian Ministry of Culinary Affairs, Geest surely know his waffles, which here come in two varieties: An ethereal version of the Brussels classic—crispy-on-the-outside, fluffy-on-the-inside—and the star Liege wafel, a dense, oblong treat cooked with imported sugar pearls that pop warmly and sweetly in your mouth. Dinges (aka toppings and extras) are anything from whipped cream and strawberries to Nutella and dulce de leche, offered in customizable combinations to create your own WMD (Wafel of Massive Deliciousness) served messily in a paper tub with a plastic fork. Unfortunately, you'll have to enjoy your taste of Belgium standing up, making for a sloppy experience, depending on your toppings. DeGeest also counts students with the munchies among his best customers, so your experience may be tempered by the squeals of juvenile dining companions, depending on the location.
