Chef/owner Jay Caputo purchased Espuma Restaurant and Martini Bar in May of 2004. During his years studying at the Culinary Institute of America in New York and serving as a Culinary apprentice for some of the finest James Beard Award-Winning Chefs across the country, the Chef crafted his own unique style, and grew his desire to take his talents out on his own!!! While Espuma was already an established restaurant, the Chef has elevated it to new heights in the 10 years in which he has been involved. The cuisine has won numerous awards, and the Chef has won Best Chef in Delaware in 7 of these years, and has even been nominated for the prestigious James Beard Award for Best Chef Mid-Atlantic a whopping 6 times!!!! The cuisine has been appreciated by family, friends, and dignitaries, alike, and shows no signs of slowing down!!!Chef Caputo stresses the importance of taking the freshest products sourced from his network of farmers and minimally manipulating them into the flavors of the Northern Mediterranean. He draws from the cuisines of Spain, Portugal, France, and Italy…..for the most part, and uses his extensive experience cooking in the finest kitchens in Northern California to create a cuisine unique to his style. Whether it is handmade pasta, rolled to the perfect texture, and cooked just “to the tooth”, or a fresh, sun-kissed heirloom tomato, just warm, glimmering with a fruity olive oil and sea salt, you can trust the experience of Chef Caputo to create a dining experience you will remember forever!!!
