LunchBox Laboratory got started in a 400 square foot building in the Ballard neighborhood of Seattle by the MacGyver-like culinary vision of Food Alchemist Scott Simpson. The original concept was born of Scott’s love for his mother. By mixing nostalgic Americana comfort food with an off-the-wall twist, he was able to create that unique restaurant that she would have enjoyed and been proud of. Today, Lunchbox Laboratory continues to be a nationally recognized culinary force. With the Southlake Union and Bellevue locations and more planned on the horizon, they will continue to bring you the “world’s best burgers and shakes” for many years to come!

I stopped here for lunch with some family during a trip to the Seattle area. The place was booming, yet they amazingly sat us quickly. The burgers came out fast and they were HUGE! We devoured our food and it was frankly one of the best burgers I've ever had. I will definitely be back here the next time I'm in Seattle. Read more
